The Organically grown wheat is free from potentially dangerous contaminants , often grown on smaller, family-run farms and the organic flours are stone ground from small, locally owned independent businesses.

A flour that bears the organic farming certification label has passed through a rigorously controlled and documented path from seed to flour sack.

The cultivated field must have been free of chemical applications for three years . There must also be an ongoing long-term soil improvement plan. This will include the crop rotation , the fertility management and the erosion control .

Insects and diseases must be combated through techniques using approved material, not only for the grain crop, but for all cultivated crops in the field over the course of several years.

If prohibited substances are applied, the camp will lose certification. Three years will have to pass before any crops grown in that field can be sold as certified organic. These rules therefore also apply to wheat and therefore to the flour coming from it.

In fact, the certification process does not stop when the wheat is harvested. The storage , both of the wheat and of the flour ground from it, must take place in suitable conditions.
